JELO KOJE JE PODIJELILO SVIJET: Recept za najbolje škembiće koje ste ikada probali!

Škembići ili tripice su jelo koje je podijelilo svijet na strastvene obožavaoce i one koji ih ne žele ni vidjeti, a od njihovog mirisa se guše. Niko nije ravnodušan prema ovom jelu.
Šta je potrebno za ovaj gulaš od škembića / tripica / goveđeg buraga? Donosimo vam recept za najbolje škembiće koje ste ikada probali.
Za otprilike 1/2 kg škemebića
Faza 1
Dobro operite škembe u hladnoj vodi i cijelog (u komadu) ga stavite u lonac.
Dodajte:
- 2 glavice mladog crvenog luka ili obicnog crnog
- 2 glavice bijelog luka u ljusci
- 3-4 lista lovora
- 10-ak zrna crnog bibera
- 3-4 zrna pimenta (opciono)
- pola veze svjezeg persuna
Sve zajedno, u poklopljenoj šerpi, na tihoj vatri kuvajte najmanje 2 sata
Faza 2
Koristite samo skuvano škembe iz faze 1. Ostalo bacite.
U ekspres lonac, ubacite 50 g (ili više po ukusu) sitno sjeckane slanine. Staviti da se kratko proprži, tj. da počne da se topi. Na to dodati:
- 2 glavice mladog crvenog luka ili običnog crnog
- 2 glavice bijelog luka,
- 2 manja sitno sjeckana paradajza ili jedan veći,
- na uzduzne trake isjeckane škembiće iz “faze 1”.
Kada se sve malo proprži naliti sa
- 2 dl bijelog vina,
- 1 dl kuvanog paradajza ili kasiku pirea od paradajza.
Dodati zacine po ukusu, kao npr. biber, kari, sjeckani svež list peršuna ili celera…
Sve posolite po ukusu i nalijte sa otprilike 1/2l vode (možete i više, ako želite čorbastije).
Zatvorite ekspres lonac i kuvajte oko 45 minuta. Ako kuvate u običnom loncu produžite vrijeme kuvanja za još toliko, ili sve dok škembići ne omekšaju sasvim.
